  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander

  3. Stir in the diced tomatoes, and also coconut milk/ cream, and chicken broth if you have. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the chicken is cooked through.
  4. Stir in the cilantro and salt and pepper to taste. Serve over rice.

Tips:

  • For a spicier curry, add an additional 1/4 teaspoon of chili powder.
  • You can also add other vegetables to this curry, such as carrots, potatoes, or green beans.
  • If you don’t have coconut milk, you can substitute it with heavy cream.
